Pumpkin Cupcakes (#3)

In the fall, I just love to make Pumpkin flavored foods!   
This is a quick, easy and delicious recipe to add pumpkin to your cupcakes!


Pumpkin Cupcakes

2 cups flour
1 1/2 cups sugar
2 tsp. Baking powder
2 tsp. Cinnamon
1 tsp. Baking soda
1/4 tsp. Ground cloves
4 eggs
1- 16 oz. Can of Pumpkin
1 cup oil

 Spoon into cupcake liners and bake at 350 degrees for 18-23 min.  Check with toothpick to come out clean.

Cream Cheese Frosting

8 oz. Cream Cheese (softened to room temperature)
1/2 cup (1 stick) butter
1 tsp. Vanilla
1 tsp. Lemon juice
2 cups Powdered sugar.

Beat Cream cheese, butter, vanilla and lemon juice until light and fluffy.  Gradually add 2 cups of Powdered sugar.  Spread on cool cake.

Halloween Cupcakes - Brains (#2)

Here is a quick and easy Halloween Cupcake to  make!


How to pipe the frosting:

-Start at the top just off center and pipe a strait line across the cupcake.  
-Once you reach the other end follow the edge of the cupcake around until you meet up with your starting point.
-Then zigzag back and forth until you fill in the part of the cupcake you just outlined.
-Repeat on the other side.

Frankenstein Cupcake Cake (#1)


For my Frankenstein Cupcake Cake I used square cupcakes.
Three square cupcakes across the top and four down. (Above)
  
Supplies Needed:                                                                             
-Black & Yellow Shiny Jell                                                                
-Two mini Reese's Peanut Butter Cups                                            
-Two toothpicks
-#12 Frosting Tip
-Round cupcake liners
-Square cupcake pan
-Green Frosting                               

-Frost the 12 square cupcakes with green frosting.
-Using the #12 tip.  Pipe the nose and eyebrows on the lower half of the cake. (You'll want a large forehead)
-Use black jell to outline the eyes, then use the yellow jell to follow the black outline.  Fill in the center with black.
-Then draw on the crooked mouth, scars and hair with black jell. 
-Unwrap the mini Reese's  Peanut Butter Cups and stick them on the end of the toothpicks, insert the toothpicks into the side of the cake.   
-Done!

How to make Square Cupcakes

I know we are all familiar with the traditional round cupcake.
And we have all seen those cute Cupcake Cakes that are made with round cupcakes.
So when I found this mini square cake pan I was excited by the thought of making square cupcakes!
It would make those Cupcake Cakes even better! 
So I had to try it!  And it was a success!!!

Here is how easy it really is...
You can find this 12 square cupcake pan at almost any store that sells baking pans. (I found mine at Wal-Mart)    
 I used traditional round cupcake liners in the square pan and found they fit perfectly!  

I filled the cupcake liners and baked the cupcakes the same way you make traditional cupcakes, and as you can see they turned out perfect!

At this point you put the cupcakes together in what ever shape you want the cake to be, and you frost it just like a regular cake!   Plop the frosting on top and frost those cupcakes back and forth.   Maybe it's the perfectionist in me but I like it when things fit together just right!
